Not if you set it up in Alabama. You would need a registered agent in state and attest that the LLC has at least one member but you would not have to disclose the names of the members, etc. I'm not sure about LA state law, though.

Not necessarily. You only have to make minimum disclosure of the initial members in the public filings in some states. That could be your lawyer or another entity, who could then promptly transfer the ownership interests to others via non-public assignments. There are ways.

You can take payments over 26 years. Several million a year on average. Way less to deal with.
