Make sure the ER staff documents every single complaint she has, even if it’s just minor stiffness, because soft tissue stuff often peaks a day or two later.
Since the other driver pulled out in front of her, the liability should be pretty clear, but insurance companies love to drag their feet on the valuation of a "brand new" car.
I had a similar situation and worked with Gammill Law to ensure the total loss settlement actually covered what the car was worth.
It might be worth checking out their site for a free case review just to see where you stand legally before signing anything from the insurance company.

Turns out her head/brain injury was pretty severe. Four months later, she's still seeing multiple occupational therapist working on few things related to it (vision, etc). Finally got the initial ER bill from the day of the crash. It was eye opening and based on the totality this incident, we're bumping up the amount of coverage on our insurance.

No she wasn't. I will say this. Her car has/had collision avoidance and even it didn't have time to engage. When traveling in the far travel lane at 35 mph and some one pulls out 30-40' in front of you you wouldn't have time to apply the brakes, much less stop.

Lonnie,
went through something similar with my wife last year - twice, in fact
last February she was pulling around a dump truck that was parked in her lane and hit a city street sweeper (which she couldnt see until too late because of the dump truck) - unfortunately she got the blame for that one
lost consciousness briefly when her head hit the steering wheel, suffered brain fog for a couple of months afterwards - totaled our Mazda CX-5 which we were planning to replace anyway
then in December, she was turning onto our street when someone ran the 4way stop sign an crumpled the front right quarter panel of our new Subaru Crosstrek - didn’t total it, but it took 2 months to get it back (other driver’s insurance covered everything, including rental cars)
wife said it wasnt until we got our car back that she felt things were back to normal for her - hope yours will experience that soon
