Ours is traditional and literally everything is from scratch. We render down bacon fat for the roux, make our own stock, our own sausage. Lots of work, but we’re proud of it

Word. I think some groups try to be too different and the gumbo ends up being not nearly as good.

Some try that peanut butter roux...I saw some teams even use premade roux...
We thought about okra, but so many people whine about okra, so we went with a file last year. It really comes out amazing.
