I am looking at either cellulose or fiberglas blown in blanket for new construction exterior walls. Most contractors are using cellulose around here but just wanted to see what the opinions of others are? I am not using spray foam in walls because the payback isn't high enough.

Don't use spray foam in the ceiling either...if you ever have a leak, you won't know it until it's much too late. Instead of fixing a small keak, you'll be replacing most of your roof. Spray foam insulation is one of the worst things you can do to a home, a house has to "breathe".

I think they used batts in my walls and blown in for the attic itself.

It's a simple concept. Close an ice chest with a little water in it and see how long it takes to grow mold. A sealed house is the same way.

If memory serves a big issue is the contractor who does the air conditioning has to be knowledgable of appropriately sizing that system to dehumidify the home because it's so sealed up.

Not true at all, just control your humidity.
The leaking roof is my biggest fear.

Control the humidity is a must. I was using the ice chest as an example.
But I do agree to make it as tight as possible during construction then add ventilation if needed.
