Hit the trails. Hiking is the best thing about the area IMO. Also, I always take a picnic lunch and hit one of the parking areas by a creek. Let the kids play in the creek (there will be plenty other kids doing the same), then eat lunch.
I like Huck Finns Catfish in Pigeon Forge to eat. Other than hitting that and a pancake house, we always cook and eat at the cabin.

A lot of tourist traps set in a beautiful area. Do yourself a favor and enjoy the outdoors. Pick a few trails, go to Cades Cove, tubing, rafting, fishing, etc..
If you have kids there are tons of mini amusement parks to keep them busy and Cades Cove will have wildlife viewing from your car. I think park rangers have a few night shows you can attend which may be fun for kids (if they still do them).
As far as eating, i'd say Apple Barn is good and kinda fun experience. There is also a little bar n grill called Blue Moose which was great last time we went.
Final word of advice, Gatlinburg is like the strip. It will be fun to walk a time or two but don't waste too much time there. Go explore the surrounding area instead.

The Alpine Coaster is alot of fun too.

How old are your kids? They could be miserable at Cade's Cove. It is a long driving loop to look at nature/historical buildings. It can take several hours to make the loop even without stops at any of the sites. I am not saying don't do it - just be prepared for it to take forever.

Old Mill is okay, but not worth a long wait. Pancake Pantry is good, but costs a lot more than I want to spend on breakfast. Wonderworks(the upside down place) is pretty fun.

I am headed there as well at the end of June. Does anyone have recommendations on the local golf courses? I figure I'm going to need at least a half a day away from the wife, daughter and her friend.

Hit up the Ole Smoky moonshine place in Gatlinburg...they have free tastings and you can get a nice little buzz...I did this and then went up the ski lift thing immediately after...it was a good time....other than that...listen to all the folks who said to stay away from the trashy tourist shite...go see the park...it will be beautiful this time of year...

Friends just got back last week and saw 4 black bears right off the road in Cades Cove. Great time of year to see bears along with 100's of deer and turkeys early mornings and late afternoon in Cades Cove.

Cades Cove. Do the water fall hike. Won't be disappointed.
Don't forget Smokey Mountain Knifeworks. The Log Cabin pancake place is the best of all. The strip is good for one or two walks. My wife loved the shopping section that looked like it was an old-style German village. Food is great, too.

you could at least do a short hike, Laurel Falls, even the 5 yr old could do it, it's paved, barely a mile with rest benches and it's a beautiful fall.
