Even that.

I've never done that and can still get great-tasting and juicy results from my smoked meats.

For any meat I smoke I add seasoning just before putting it in.

The smoker has a water basin to keep it moist.

The only thing I really mess with is what wood and how much wood vs. wood charcoal.
