I worked at a GM dealership several years ago and I have heard of these issues.

Get your VIN and call your local GM dealership service department and get them to run your VIN to see if there are any recalls, TSB's, Customer satisfaction program...that can address your concern.

Wife’s 2019 Colorado does this and it is annoying as hell. You can feel it shudder at certain rpms like it is slipping.

Yep. 2016 Silverado and it generally starts around 65-70 mph.
