If you can afford the spray foam for 3,500 sf and will be in the house for a long time, look into it further. Utility costs are increasing. And gas beats the heal out of an electric heat pump.
Think about your living space -- office, play room, etc. Kid's play rooms need to be away from the main living areas of the house.
Go large on the utility room, and wire it with extra breakers so the multiple appliances don't trip them (think what can happen if all the compressors in fridges/freezers/etc. come on at the same time).
Decide how much storage you'll need, then double it. Add a workshop while your at it.
Skip the fire pit and install a double sided fireplace that opens up to a nice porch.
And if you have 1,200 acres near the Big Black, you're gonna need some wall space.

Make closets out of any dead space I walls. You'll appreciate the extra storage space and it's not much money to add. Deck your attic and add plenty of lights up there. It'll keep things more organized. Make custom closets with extra storage and a seating area. Again, not a huge cost if you plan it right and work with your trim guy to build correctly. Your wife will love it. Add extra blocks of wood between studs where you think pictures or tv's will be hung. You can do that yourself and its a huge help later on.

Don't put your water heaters in the attic.
And if you use pull down attic entry, use the wider ones. They're slightly more expensive than the standard ones that are the width of a toaster.
