Having a rather large argument with the parental unit on this topic: who is your dad’s first cousins child to you ??? My mother says it’s my second cousin. I told her she couldn’t be more wrong. So am I to that kid?

I believe her first cousin is your second cousin and his kids are your third cousins.

I am going to help out a bit here by posting a diagram of your family tree.

If she said it is your grandchild, would she be more wrong?

Number 2 in your chart is wrong.

Your son is your dad's step brother-in-law.
Or your dad is your step son-in-law

I believe it's this. First/second/third basically denotes offset from your grandparents. Once/twice/three times removed denotes generations difference.

1st and 2nd cousins are how many generational steps you are removed from your last direct decedent, with the smaller of the two numbers being the cousin you are.

For instance, your first cousin is the grandchild of your grandparent. That is 1 generational step.

Further, the direct decedent of your parent's cousin would be their grandparents. That is your great-grandparent, and thus, two generational steps exist between that fork. So your parent's cousin's kid is your second cousin.
