Very true. You get on call service instead of the usual wait staff pattern of “come by the table 18000 times in the first 10 minutes of them sitting down and then utterly disappear for the next 30 minutes”

Yeah we love it. Better and faster service for sure. We have a few spots where we've gotten to know the bartenders too so it's fun to talk and even drink with them.
