I have seen people who have a betta fish in a globe with a plant on top. The roots go down into the water. Do these fish eat the roots to survive?

those fish are bubble nesters, and surface oriented as evidenced by their upturned mouths. they use the roots of the plants for hiding places, s well as for nest building.

No. They need to be fed pellets.

my gf goldfish died... I had come to like that thing. Anyway, my daughter bought me a beta fish. I liked the goldfish a lot more, had some personality, this beta fish freaking hides out and just sits there.

Still learning bout beta fish, don't know about the plant.
