Go to carnival, ride smaller rides and be done. If you want thrill rides go to six flags or a fixed theme park.

Only way to inspect for intergranular corrosion would be ultrasonic testing done by certified Level 2 or 3 NDT inspectors. Possibly could be detected using thickness measurement UT devices, which is a much simpler test but only useful for known internal geometry of the test specimen.
Eddy current could also possibly be used but it is only good for detecting near surface corrosion less than roughly an 1/8" from surface.

The complicated "big thrill" rides are the issue.

The kiddie rides aren't an issue.

The time-tested rides aren't an issue.
