Of the estimated 1500 or so crawfish farmers in LA, very few (you could probably count the number on both hands) do it as a sole source of income - vast majority farm other other crops (rice, soybeans, sugarcane…..) or have other full-time occupations.

There over 400 species of crawfishes in North America (600 + world-wide) - fewer than dozen are large enough in size and available in sufficient volume to exploit to have any commercial value.

Exactly….anyone trying to eat crawfish in the winter is destined to be disappointed, IMO. Too expensive and too small. Hot weather is crawfish eating time!
