Ask to him to pick up everything on his way. Several sacks of crawfish, seasoning, fixings, etc. Let him do all the work while you drink beer and pretend to listen to him tell you how it’s done. Then don’t pay him back for any of it.
Either he’ll back out or you’ll have a free crawfish boil. Win/win.

First, this isn't a crawfish boil issue.
Second, you don't uninvite someone like you are in 7th grade. Tell him that you will do it your way and that he is welcomed to have his own crawfish boil and do it however the frick he wants to.

You're probably a good guy with a healthy ego but the problem with people giving tips on crawfish boils is that if it's not a suggestion that you're willing to try it gets kind of awkward with somebody laying down all these suggestions as you're ignoring them.
Crawfish is too expensive to go experimenting with joblo invitees suggestions.
It's different if you're new to boiling crawfish and you're actively looking for suggestions but most people that are hosting a crawfish boil have probably done it before and want to be safe and do what they know..

It's just like anything else. When someone invites you to a crawfish boil, bbq, or have dinner that they are cooking... You don't tell them how to prepare it.
If you are having a conversation about it, it's cool to say "I do mine like _____________, but I like it this way as well" or something like that.
If I were preparing something at an event I was giving and someone comes tell me that it should be prepared this way or that way I will tell them I am doing it my way and if they don't like it they have the option to leave. If someone says "I do mine like __________" I would just simply say "I might have to try that out next time".
This isn't a hard situation to handle.
