What you plan on putting up there? Christmas decorations, porn stash, boxes of clothes, stacks of plywood?
As long you not putting anything heavy up there you'll be fine with 2x10s 16" o.c. you'd actually be fine with them on 2' centers. If you go 16" o.c. you can lay 1/2" plywood for the floor, 2' o.c. you would have to go 3/4"

Honestly, how does the cost of metal construction like this compare to wood framing? Seems like it would be expensive.

60 2x4x8 for top plate
75 2x10x14 for ceiling joist at 16"o.c.
45 sheets 1/2" plywood for floor plate

You will want to put a double top plate on your studs to catch the joists. And make sure when you do your layout to land the joists on the studs.

I'd still do what you suggested. Or at least 2x10, 16 o.c.
In my experience, storage means a consolidated load in a concentrated area. Anything at 2' o.c. will sag or break in that area of you use 2x4 or 2x6

Bottom plate should be pressure treated if on concrete.

Awesome. Hoping to get this done to make a fully insulated, air conditioned shop so that my dad will have a place to get back into the hobbies (mainly woodworking) that he used to enjoy before his heart attack. Thanks again and again for all the help.

Yeah, you're right. I'd stay away from 2'oc.
