Hell of a job.
2nd half of the 19th century means 1850-1900 so possibly sailed there. 3,000+ km SW of Hawaii from the mainland USA by wind propulsion is a LONG ride.
Get to the jobsite, an uninhabited island the size of four city blocks and basically on the equator.
Second half of the 19th century and the remoteness of the island also implies 100% manual labor so toil away in the equatorial sun shoveling and toting bird shite until the ship's hold is full.
Get back on board your ship, now fully laden with bird crap for an even LONGER ride back.
Folks bitch about their awful commute on the way to a desk job at an air conditioned office, sipping $6 a cup coffee.

Baker Island also has a lot of typhus carrying mites. An island in the same area, Howland Island, was Amelia Earhart's destination.
