Idk how picky your wife is, but what about purchasing a loose ruby? Then you could go together and let her pick the setting.

I’m insanely picky about that stuff so I’d love to get a pre-gift like that, but to some it probably takes the excitement away.

I am currently watching Thomas Kinkade's Christmas Cottage on IMDB through Prime. It's pretty good. Thank you for introducing him to me. It is still too soon to give you an informed opinion. I will try to have one for you in the coming months as I digest his paintings and story.
