In my opinion this is the most beautiful recessional hymn for both Priestly Ordinations and Weddings, or really any great occasion.

Some of the ones that I've come to appreciate more recently that are not as popular as stuff like Hark the Herold Angels Sing (which is fantastic):

Gabriel's Message (Catholic I think)
Though, there's hardly a traditonal Christmas carol that I don't like.

You nailed it. One of the best parts of Christmas is the first notes of O Come All Ye Faithful as the mass entrance starts.
Silent Night is up there for me because we inherited a tradition from wife's family of singing it together on Christmas Eve.
