CAPTCHAs are used to translate old text

How would it know if you entered an incorrect answer if it doesn't know the correct answer? Wouldn't a bot just be able to fill anything into the field and pass the captcha test if the answer can't be verified?'
ETA: I guess it could just be part of the captcha is the word that needs translation. I think that might work.

If the computers don't know what the text is, then how would It know if you get it right or wrong?

It obviously crowd sources the answers and doesn't take each person's answer as correct...

So we are doing googles work of translating all the past issues of the NYT for them for free...

It generally knows part of the answer and uses you to tell it the rest. If you get the part wrong that it knows, it tells you that you've failed.
