I'm going to call them tomorrow just to talk to them and to see if the catering trays come warm or if they needed to be heated up. I will have some sterno but no grill. I'll ask them how much of a heads up I need to give them.

I haven't gotten food from Chris's Meat Market in New Orleans, but the place seems legit from the outside. Rouses had delightful finger sandwich trays.

Billy's in Krotz Springs has the best boudin balls and pepperjack rolls in the state. Worth the drive

The food comes hot. It would be a good idea to call a day ahead of time for an order this large. Here's a link for the party menu of trays.

They are a goto for catering trays in my opinion. A tray of balls and tray of little sammiches they make are what I bring to any event when I am asked to bring food.

However maybe try mathernes catering trays(boudin, catfish, muffalettas) or Crispy Catch(by Zippy's) if coming into BR from Nola.
