I always go through Atlanta - if you time it right Atlanta traffic is no problem.
That route avoids I-40 from Knoxville to Asheville. That highway is bad any time of the day or night.

Go to Nashville, hit Broadway, take the scenic route over. You'll be glad you did.

I 40 from the TN border to Asheville is a bit of a pain.

One of the prettiest stretches of Interstate in the country - certainly anywhere in the Eastern US.
I'll be the oddball here and say go US74/64 from just past Chattanooga. It may add a little time, and a good bit of it is winding 2 lane mountain road, but you'll never just be sitting in traffic and you get to pass through some of the wonderful little mountain towns of W North Carolina. Lovely area of the world.

I'll second this,if it's not too far out of the way. You'd get to drive through the Nantahala Gorge, which is beautiful.
