New Orleans is the obvious answer. But really, it depends on what you want.
Small/large? Indoor/outdoor?
What's the budget (most important question)?
Lots of out of town guests? Mostly locals?

We did Southern Hotel in Covington for about 200 people. It was great for the price and their execution was well done. Indoor or outdoor flexibility, great food, etc. They made it very simple and easy.

You should hire a wedding coordinator or research this on you own rather than asking a bunch of virgins who post on message boards all day.

My cousin got married at the old governors mansion in Baton Rouge. They were going to have it outside in the garden but it was a rainy day, so they had it inside. Very beautiful.

Do something the first weekend of November or go to New Orleans on jazz fest or voodoo fest weekends. The best time to be considerate for your guests would be to wait til next year's Mardi gras. You get a deal on hotels for $400 a night.
