1700s - Marquis de Lafayette doesn’t get enough credit IMO.
1800s - Napoleon Bonaparte and no one else comes close. Sherman, Lee, and Grant (easily the most underrated famous general ever) might be in the conversation for runner ups.
1900s - Georgy Zhukov stands out among an incredibly talented field.
2000s - this one is hard since warfare is becoming so asymmetrical. Petraeus has a good argument though.
Edit - I’m a history fan but clearly have an American/western bias. Very possible there were some Asian or Muslim dudes kicking arse somewhere that I never heard of. Only one I’m sure about is Napoleon.

Picking the best German General is tough. Rommel is up there but I would give it to Manstein based on France and Third Battle of Kharkov.
