Several videos have suggested that it's the defrost heater. Replacing it seems pretty easy.

I've jumped the defrost and the heater didn't turn on but I then used a non-contact voltage detector that showed each wire leading to the defrost heater had current. When I disconnect the jump wires the wires leading to the heater had no current detected. Is that what's supposed to happen? Does that point to the defrost heater as the problem?

If I manually defrost the coils with a blow dryer, will that buy me a few days time to figure more out and order parts?

This is what I'll say again. My WP was doing the same thing, I checked and did some of the things you are asking about. I'm not Nappy, but what I found for my problem and possibly your's was a loose connection/bad whatever fan motor. Being as it is intermittent, my money is on a bad connection.
Don't try and reinvent the wheel, just fix the problem.

You keep dragging me back dude. Continuity only means it's closed which it might need to be depending on the cycle. Look at the problem, look at the timing, and quit projecting. I'm out, but good luck.
