Personal choice. I feel as though I gel with much of the philosophy "Do unto others as you would have them do unto you", "Judge not, lest ye be judge", "Turn the other cheek", ect. It's a religion that despite the hypocrasy of its members focuses mostly on self-discipline, humility, tolerance, charity, and putting the needs of others before yourself. It really seems to a road map to a fulfilling life and a peaceful, thriving civilization. But that's just my take on it.
I chose Catholicism in particular due to the appeal of the traditions, community, and celebrations. Everything has a ritual, every ritual has a purpose, and everything is sacred.
In South Louisiana, Catholicism also has a very redemptive vibe that it often lacks elsewhere. It's kind of a "we're all flawed" mentality which leads to people taking everyone as they are while striving to be better and seeking forgiveness and grace when they falter. It's just a wonderful lifestyle to live by.

How long did it take God to create the billions of other galaxies with trillions of planets? Did he make every atom and every element and design the chemistry it takes for life forms to exist?

That's the awesome thing, I have no idea and I'm ok with that. I don't know how long it took. Yes he created it all. I thank him that we are able to grasp a portion of it.

The philosophy of christianity is as far as it relates to getting along with your neighbor is positive. I have much respect for Jesus and beleive he died showing his followers the length that we should go to forgive one another. I have a hard time with the belief that he died as a blood sacrifice to Yahweh so original sin could be forgiven.

Why is it hard to grasp? You have to understand, God is holy. He is pure love. God can not change his mind, he's right from the beginning. He can not be both holy and associated with sin.
Period. It is a contradiction. Therefore, ever since the fall of mankind to sin (garden of Eden) we, humans, have been separated from God.
Even the very special humans, Moses, Abraham, David, ECt. Were not allowed into heaven at first. God can not associate with sin. He is Holy. He is Love.
The father, son, and spirit are in total agreement and plan. The son, or "the Word", gave up his life. Let me say that again. It wasn't taken. It was given. And thank God that he loved us enough to come show us the way and give us the word and present himself as a sacrifice so that those of us who have ears and can hear May clothe ourselves in his spotless robes when we are before the father for judgement.

That's the beauty of America. You can believe whatever you choose to believe or not believe. If you don't agree with the concept of original sin, then simply ignore it. If you think that much of the book of Genesis is parable, that's fine, too. Just keep an open mind to what others believe.
When I was confronted by Mormons, I didn't ridicule them, I conversed with them, read some of their teachings, and decided it wasn't for me.
When confronted by Hindus and Muslims, I did the same for them. I have attended synagogues, baptist churches, and catholic cathedrals. I have read from the Koran, the Book of Mormon, the Bahgavad Gita, the Holy Bible, ect. I have even read athiest works by Dawkins and the Satanic Bible. Believe what you wish. Just be a good person, be true to yourself, live a good life, be forgiving and non-judgmental towards others, and treat others the way you want to be treated. Do those simple things, and you're ok in my book.

We'll that is your choice but God can provide such a joy and a peace that would make it really hard to turn down.
Maybe one day you'll decide to at least try it out. He's right there waiting in case you do.
