I know over the years there have been interesting ones like Bing Crosby and Bowie singing Little Drummer Boy.

I’ll stretch artist to include actors and directors.
Orson Wells did a spoken word piece for Manowar’s debut album.

Allison Krauss has done work with several artists I think most would consider unusual given her primary work in bluegrass. Two albums with Robert Plant; sang with Phish on If I Could from their Hoist album; sang with Def Leppard on This Guitar and Lifeless from their Diamond Star Halos album.
