Gonna get a lot of grief here, but for me the origination of the genre, and still the GOAT, was this.
Tony Peluso absolutely shreds the solo at the end.

Apparently there is a new podcast coming out about this.
LINK
It will be out on Spotify tomorrow. May check out an episode or two to see what it’s all about.

In his new, eight-part podcast — duly titled “Wind of Change” — the journalist Patrick Radden Keefe doggedly pursues a rumor he heard nearly a decade ago: that American intelligence officers wrote the power ballad as a tool to help end the Cold War. “On the one hand, this is an investigative story about Cold War espionage, but on the other hand, it’s about these ’80s hair-metal guys who are inescapably absurd,” Mr. Keefe explained in an interview. “That’s the reason I hadn’t been able to cut this idea loose — the contrast between the serious aspect of it and the ridiculousness lurking at the edges.”

For me it's Aerosmith "Angel."
Queensryche "Silent Lucidity" has some prom sentimentality for me.

It’s so weird to see this. I have always thought there was something odd about the lyrics in that song when he talks about Gorky Park. It’s a park in Moscow (I had to look it up later) it honestly wouldn’t surprise me to find out it was written by the CIA.

Alone Again
Home Sweet Home
Dream On
Can't think of any more that are worth a damn.
Is Wanted Dead or Alive considered a ballad? If so, add it to the list.

George Lynch is my favorite guitarist. The solo on that song is killer.
