Song is timeless.

It’s becoming even more evident now with all these posers making country music because they couldn’t make it in rap and the rock scene is dead

I love Alan Jackson and his music, but I don't think he's a very good live performer.

Is that a thing? Do people just go to certain bars in Nashville to play their songs and sell them to famous artists?

I've never had much luck playing in any of the bars, but there are other approaches, and you just have to start going and learning. Joining NSAI is a good first step, and going to some workshops/publisher nights in Nashville and meeting people. They also likely have a local chapter near you.
If you are writing pretty good songs, NSAI will pitch them for you and put you in touch with the people that you need to know. In the meantime you meet other writers and when they have a bit of success, that's a step closer for you. It's a long game. You have to work on your songs, do your demos and put in the effort, and keep at it.

I think most artists at least write some of their own songs, but most have a certain niche that they are good at. If they want a well rounded album, they will cover some different writer's songs. It just makes things more interesting.
