I thought Spoon was on Merge, which is an independent label.

You're right. They were initially on Elektra, but then got on with Merge.

What does the term "independent label" mean?

To those who appreciate the subtle excellence of Sun Kil Moon, I would highly recommend you explore the comprehensive catalogue of Red House Painters. Pioneers of slow core. You'll not find a more introspective band than RHP.
