Wanting to get something for our daughter (7) to start taking lessons on. Anyone have some keyboards they recommend? I know we should get something with weighted keys.

If you already have a teacher in mind, I would ask them.

I was doing the same thing for my youngster and a friend recommended a Yahama due to the keys.
I got this one on craigslist for like $100 with a stand and it's perfect.

We bought our daughter a Williams Allegro 2 from Guitar Center. Good solid full size electric piano/board, weighted keys, a few sounds, without breaking the bank. We got ours cheap brand new, I'd assume they are even cheaper on the used market.

I've been wanting to grab a Roland FP30. Any of you have experience with these?

See if you can track down a used Kawai K-1. Perfect to learn on.

Started playing when I was 7 (66 now) and have owned a few, everything from a Wurlitzer Electro, Fender Rhodes to a Baldwin Grand. Gigged for about 8 years. My electric Yamaha CP80 (early 80s) had the most realistic action as far as velocity response & sound since it had actual strings and the action was similar to their grand pianos. Played the organ in church sometimes, but was weird compared to the feel of a real piano.
About 8 years ago I found an electronic spinet Suzuki for free on CL that I needed to spend $150 for to fix a sticky action. It has decent response and 128 voices.
I think a used 10-15 year old Yamaha Clavinova from a non-smoking home would check all your boxes.
