For some reason the sax in the middle of Brown Sugar always jumps out at me for some reason. And who in Marshall Tucker thought 'Damn, these songs need more flute!"

And damn, Toy Caldwell could thumb pick a guitar. RIP

Any one that throws in a clarinet.

Classic Rock
Climax Blues Band - Mole on the Dole

Or how about in an early 90's industrial song?
Nitzer Ebb - Lightining Man

Probably the most well known tune with a clarinet.
The Beatles - When I'm 64

Aerosmith effectively using the vibra-slap at the beginning of "Sweet Emotion", and Cake using it in much of their music.

And any band that has ever used a theremin in any song.

I'm gonna leave Pet Sounds out since it's a gimme but how bout

Marimba on Bowie's "Loving the Alien"
Loving the Alien

This instrument isn't exotic but EVH's Wurlitzer on "Cradle Will Rock" carries the whole song

My favorite clarinet use is a song is in Supertramp's "Breakfast in America".

I always enjoyed that piccolo? in Funeral for a Friend.

AlxTgr, the only song that I can think of with a xylophone is "Moonlight Feels Right". Now, you're going to say "3", right?

The most unique "instrument" I can think of was the pack of cigarettes in The Beatles' "I'm Looking Through You".

Les Claypool playing the bass banjo in De Anza Jig. I think its just a regular banjo with bass strings but it sounds cool and I've never heard of anyone else doing it.

Al Jourgenson of Ministry once did a show where he ran 16 vacuum cleaners through distortion pedals. I wish I could find audio of that.

Can't You See
Heard it in a Love Song

All flute solos, all great songs. Gotta hand it to the flute.

Yeah you right! There's some really odd sounds in that song.

Do you know Gone Daddy Gone?

I thought of one more song with a xylophone, "On a Holiday" from Brian Wilson's "Smile" album.
