I checked out a couple of their videos on YouTube, they are very good. Pickers like that can help you a lot.

Make sure to do this. I didn't until probably 10 years after I got my first guitar. Once I got the action adjusted, it felt like a completely different guitar and it was much easier to play things like barre chords. It reignited my passion for playing. Before that, I would barely ever play since I just couldn't do what I wanted and it was frustrating. Now I play every day and learn new songs all the time. I wish I would have done this sooner.

Getting a lighter set of strings also help when you lower the action as a new player.

Are string sizes all about playability/style of playing or do they affect the sound as well

Others with more knowledge than I will chime in. All I know is that on every guitar forum I've been on they say on an acoustic guitar new players should lower the action and use lighter strings. I have a set of Santa Cruz strings I'm waiting to get put on when this COVID-19 stuff is over.

Playability and tone mostly. Lighter strings will have a brighter sound. Heavier strings will give more low end thump.

Yes.
Starting out use smaller gauge. Easier one the fingers except for the "e" string. Gwt too wild with it and the little bastard will cut you.

Hell yes! Try to find some books and videos about guitar theory, chord structures, scales, etc... Take it one step at a time and focus on your fundamentals. You will soon go down the wormhole of wanting to play electric which is when things get really fun.

Currently I’m following the JustinGuitar beginner program and bought a 3in1 book on fretboard memory/scales/how to use them. It’s been fun and I think I’m in it for the long haul at this point. At 32, it’s fun to be learning something completely new again.

I do fear I'm becoming a walking cliche, lol. I just want to be able to bring my guitar with me when camping, hiking, and apres skiing.

I am only about two months ahead of you so take anything I tell you with that in mind. LOL
I put 10's on mine and they are easy to mash and keep down. Its easier on the fingers. I am sure there is a little different sound in them and heavier strings but honestly, neither of us are probably good enough at this point to really tell the difference.
My guitar came with 12's on it and I played it a few weeks before I changed them. The one thing I noticed is that I cant be as aggressive as far as strumming with the lighter strings. Which is a good thing at this point.
I did some of Justins plan. Its a great way to start. I still go back and work on some of his lessons at times but I am taking lessons in person now and trying to stay on track with what he is teaching me.
I have learned how to play a good many chords now and can do some basic strumming. I am working on flow now and keeping in time. I use chords G, C, D, Am and E7 to work on my changing quickness. Just doing exercises to help with that and my strumming.

Man I hit a rough spot changing from G to everything else, especially C. Got mad, spent a weekend just changing g to c as fast as I could and it payed dividends on all changes

I can not wait for quarantine to be over. I had a baby Taylor sitting at my parents for 20 years in a gig bag untouched that I grabbed last time I was home. It’s so small that it’s perfect for laying on couch and just fingering chords for practice, but it needs some work. The action (see I’m learning) is high af. Too high for me to deal with.
