As just mentioned a couple posts earlier:

Walk Hard: The Dewey Cox story and My Fellow Americans are both hugely underrated. The soundtrack alone for Walk Hard is (musically) well done and hilarious.

The already mentioned Don't be menace, galaxy quest,and bowfinger are all good ones as well.

Wow, that's tough.

Tropic Thunder and Talledega Nights get tons of praise.

I enjoyed Down Periscope. Office Space and Dogma are examples of wonderful movies that didn't make any money at the box office, but persisted and found an audience later (Judge and Smith do have built-in audiences, but these films went beyond that, even).

More recently, it gets tougher. I can see how Coyote Ugly could be considered underrated. High Fidelity, maybe.

ETA: Good catch for whoever said Grosse Pointe Blank - I forget it is "underrated" because it is one of the most popular movies at my house.
