Schitts Creek is a moe recent one for me. I tried it when it first came out and couldn't get in to it. My wife recently started watching it and I have found myself really enjoying it. Maybe the first few episodes weren't that great.

Star Trek TNG
I was a kid when it originally aired. Caught episodes here and there but never really got into it. As an adult I loved it.
Dark
I was just so confused at first. After the first season I didn't know if I would finish it. Then I went down the google rabbit hole, found explanation videos and the family trees. I'm still confused, but not as much. Great show.
The Expanse
Tried watching it when it originally aired on SyFy network. The first few episodes left me confused and a little bored, so I stopped watching. When it moved to Prime I decided to give it another whirl and really pay attention. One of my favorite shows of all time at the moment.

was the part where Brienne and the hound were fighting. i was like wtf is this? an amazon and mutant?
now i have watched the whole series 3 times. one of my all time favorites.

Scrubs
I remember seeing the commercials on NBC when it first came out and thought it looked stupid. I finally watched an episode around season 4 and likes it so much I went to Best Buy the next day and bought all 3 seasons on dvd and binged it in a weekend.

Game of Thrones - so many characters introduced and I originally thought I’d never be able to keep up with all of the families.
Parenthood - thought it would be funnier in the beginning but eventually fell in love with the Bravermans.
Lost in Space (Netflix reboot) - didn’t like the antagonistic relationship between John and Maureen in the beginning. When the family pulled together like the original series, it won me over.

I wouldn't say didn't like, but felt they were overrated. Seinfeld and the office. Over time they've become shows I absolutely love

King of Queens and everybody loves Raymond. Growing up in the 90s I watched every local network station except for cbs. Only thing I would watch on cbs was Walker Texas Ranger on Saturday nights. Probably around 2008 I started watching g the reruns on tv and I was mad that I didn’t even give it a chance.

Not what you're asking for, but a similar situation. I didn't watch King of the Hill when it first came out because I thought it was probably just some show making fun of rednecks.I caught an episode a couple of years in and thought it was great. My life didn't revolve around TV at that time, and didn't know it was a Mike Judge creation. I lived in Dallas when it came out, and started to say I don't know how I missed King of the Hill articles in the paper, then remembered I only read the sports section for years.
