Don't underestimate Cheese's role in wanting Joe gone, by that time he and Marlo were pretty much lock in step as to how things were going to proceed after Joe

The young blood had to get rid of the old blood. It’s symbolism. Nothing stays in power there. There’s always new players coming up…the game is always the game. The police may change something one day, but they face the same problem the next day. It’s a never ending battle. That’s the whole point of the show.

The Greeks sold Joe out after Cheese sold Joe out. Cheese probably didn't know about the Brother Mouzone play against Omar and I don't remember if he knew Joe put Omar on the card game (as a favor to assure Omar he wasn't in with Stringer on the Mouzone hit, a lie of course), but he definitely knew Joe told Omar about the re-up which Omar turned into stealing the entire shipment.
Once Marlo had Cheese in his pocket he made a better "proposition" to the Greeks and it was just business from that point. Cheese essentially put a hit on his uncle and the Greeks were ok with it. Absolutely brilliant storytelling since most of that was never shown on screen.
