Walkers would only die after some serious time when their brains would be exposed to the elements since the only living thing is their basic primal center of the brain which leads them to need only the basics to survive.
They don't need flesh to live but their brains are telling them to kill and eat to survive. It is the most basic function kill or be killed.

and this show has been going on, what? like a year? it takes a human about a week to die from dehydration and a month from starvation. ignoring that this would still apply to walkers, how much longer do you think they last? especially while never stopping and being exposed all the time

well the vast majority of humanity already died, humans aren't exactly reproducing at a high rate, and walkers don't eat other walkers. where are they getting their protein?

Well that's the other side of the coin. Everyone is infected already but the virus is dormant until you die, then it can reanimate you.
I mean, it's a work of fiction. I don't know what can be said to satisfy your thoughts on the subject other than you can go create your own zombie universe and make your own rules.

Why would a creature who can only be killed by a hard shot to the head die from starvation?

but they still need protein for the muscles to move the body, etc
that would wear out quickly, especially since they're constantly exposed
once you add animals to the mix, they wouldn't last very long at all
