Die Hard just isn't Die Hard anymore. The original formula was enough: All you needed was Bruce with a smart arse mouth with odds stacked against him and a bad arse villain. Hans Gruber is still one of my favorite villains ever.

Kevin Smith has talked pretty openly on several occasions about his experience directing Cop Out. It was doomed from the start. I recommend finding one on youtube if you are into that kind of thing. I personally love listening to Smith talk about movies but I know a lot of people don't like him.
