Oberyn chose to fight as Tyrion's champion, he wasn't forced to. I think its fueling the fire for sure, but its not like the Lannisters wanted it to go down that way.

Well, since this won't be revealed, but Littlefinger hired the jousting dwarves and convinced Joffrey to put them in the wedding. He knew that would incite Tyrion and Joffrey to go after it, and then Olenna would poison him.
But no, he was completely counting on Tyrion dying. He'd deal with Tywin later, but Tyrion was his most pressing concern. Tywin never looked beyond his birth status and merely saw Littlefinger as helpful, but Tyrion could see what a monster he was and what his true ambitions were. Tyrion warned his father about Littlefinger, but he wouldn't listen. Tyrion was the more pressing concern for him than Tywin.

I gotcha. So I guess he just ended up getting two birds with one stone.
Though I think it was mentioned in here that Tyrion and Varys wouldn't stay together? Because if so I'd have to imagine that Littlefinger wouldn't like the idea of those two together.

They deviated from the book a bit here. While Varys does help Tyrion escape in the books, he does not go with him wherever he is going.

You're being dishonest here. Oberyn didn't have to fight, wasn't made to fight, and the lannisters didn't want him to fight. He chose to for revenge.
It won't help their relationship but I don't see it being a tipping point for an all out war or anything given the circumstances

It is unknown where Varys goes after Tyrion's trial.

In the books he doesn't show up until the Sept Scene when he and Cersei have sex in front of Joffrey's body (similar to E3 on the show).

No one really knows. Everyone knows that Varys had to have helped Tyrion escape, since he always had a soft spot for him and was really the only person with the means to do it. Varys was "supposedly" forced by Jaime to bail out Tyrion, but I think Varys would have done it anyway, just having Jaime help made it gravy.
There are miles and miles of tunnels below King's Landing, to where few have doubted he's left, he just knows all the tunnels, and makes finding him almost an impossibility.

Let's say Carl Weathers rapes and kills our sister Lindsay and Stan Sitwell is on trial and Stans family wants him dead so they can take over the company so they have Carl Weathers as a champion and I (GOB) volunteer to be Stans champion but die. You wouldn't be mad as hell I died?
