Her brother wasn't a true dragon. Targs aren't Fire proof. Just Dany apparently. And that's only for the show

that sucks, kinda makes it cheap that they used it as such a device for her to gain power when in both circumstances she would have been imprisoned in some shed for life

Also even if you are fire proof, having molten metal coating your head is another issue on top of that.
I like the book explanation that Danny is not fire-proof better. I think the show sees it as a convenient excuse to keep burning her clothes off.

why do they follow her when Khal dies, and how does she re-become the dothraki leader in the books when they get her again?

Well the first burning scene happens the same way in the books though the explanation there is more tied up in the whole blood magic and dragon birth than Danny's ability to withstand fire.
The only reason she is dragged off to the Dosh Kahleen at that point is that all of the Warriors in Drogo's army assume she is dead and ride off. That leaves her with Jorah, three warriors loyal to her, and a bunch of civilians/slaves.
The second scene has not happened in the books.

In the books she still walks into the fire with Drogo and the eggs, and isn't burnt (except for all of her hair). But GRRM explained it as a magical event, and not that Targs were fireproof.

seems like this made her fireproof or she was fireproof before it happened
no reason to doubt she was fireproof before it happened.
also didn't she pick up the dragon eggs in the book when they were really hot and she didn't notice?

GRRM has called the dragon birth scene exceptional and "miraculous." He said she wouldn't be able to do it again.

Jon was burned, viserys was burned. A bunch of targs burned at summer hall. GRRM said targs aren't immune to fire

They don't. Her followers right after Drogo's death are slaves and civilians left behind when Drogo's khalasar disperses on his death.
The books left off where S5 left off for Danny. She flies away on Drogon and sees the Dothraki coming (to take her to Vaes Dothrak).

no she gets in and her servant says it's too hot but she doesn't notice

No the water is too hot for the servants but she says she likes it that way. Danny has always had an affinity for heat/fire where she spends time staring at her brazier in AGoT. I've always read the bath scene as being within normal human tolerance, she just feels a greater affinity than others.
