I never have but I've had it that way. Nothing wrong with it at all and it looks delicious 
With deer roast sometimes I deglaze with some coke (classic not the nose candy) and it gives it a little sweetness and a different flavor

Sounds like you need to quit spending so much on golf and hunting and put some into maintenance of the homestead.

I called my old neighbor who does HVAC and he says all the parts warehouses are closed today so even he couldn't fix it today.

Shouldn't be but the parts they use in those A/C's aren't built to last like the old days. My fan broke last summer (house built in 1999) but when I got up there to look, it turned out to be the bracket broke and jammed it to where it wouldn't turn. Got my old sheet metal tools out and rigged up a temporary bracket until I got the guy out to change it out. Glad my son is going into the refrigeration field in a few months when he gets out of school....hopefully he will be able to do the fixes really cheap.
