Lets go through this drive by drive:
Opponents receives the ball and scores a TD. 7-0 them.
We receive the ball and don't score. still 7-0 them.
Opponent gets ball back and scores a TD. 14-0 them.
THEY CAN'T BE UP 14-0 UNLESS WE FAIL TO SCORE ON OUR OPENING DRIVE.

You are so dumb. The game would be 7-7 IF we score on our opening drive whether we get the opening kickoff or not.
Lets do it again:
Opponent gets the ball and scores a TD. 7-0 them
We get the ball and score a TD. 7-7.
You can switch who gets the ball first and it doesn't matter. Falling behind by 2 scores has everything to do with what we do on our opening drive and not who gets the ball first.
Now lets play out the whole first half into opening possession of second half pretending that neither team gets a stop:
Opponent scores a TD. 7-0
We score a TD. 7-7
Opponent Scores a TD. 14-7
We score a TD. 14-14
Opponent TD. 21-14
LSU TD. 21-21
Opponent TD. 28-21
LSU TD. 28-28
HALFTIME
LSU Receives and scores a TD. 35-28 LSU is winning and now the opponent is chasing in the second half.
Now I realize that almost no game goes an entire half without any stops BUT with how bad LSU's defense has been we have to operate under the assumption that the opponent will score on pretty much every possession. SO we have to optimize our ability to "steal" a possession by scoring before half and then getting the ball right back after half. It allows us to score twice without giving the opponent a chance to respond.
The only way this doesn't work is if the opponent can score with like 30 seconds or less before half. Our offense has shown time and again that they can go down the field and score before half in less than a minute.

Thats not what OP says at all. It says we don't score early in games but DO score coming out of half.
Other than Grambling we haven't scored an opening drive TD all year. So why would we take a net strength which is scoring before half and then scoring AGAIN coming out of half and trade it for taking the opening kickoff knowing that we usually start slow on offense?

I’d rather do that to start the game, then start the game from behind. I thought I made that pretty obvious, but I guess not

1) not scoring on the opening drive vs FSU and then scoring against Grambling doesn't exactly make a trend.
2) Do we not receive the ball on a kickoff after the opponent scores? It has less to do with receiving and more to do with the offense identifying what the defense is doing early and then making them pay the rest of the game.
Losing the double possession around half is not worth potentially feeling better in 1st quarter.
Its just not a good plan and statistics back it up which is why most teams defer.

One of the bigger factors in our win over Arkansas was the fact that we RECEIVED to start the third.

Thank god we took the opening kickoff! It definitely saved us from being down multiple scores…
