I'm going back to late 70's/early 80's, so:
1) Chris Jackson
2) Dalton Hilliard
3) the Shaqtus
4) Cecil Collins
5) Tyrann Mathieu
Those guys stand out to me because they always seemed to do something special at least once a game. For pure entertainment value, that's my top 5. Others close to that group:
Tyrus, Dewayne Scales, Wendell, Hodson, Peterson, Faulk, Special K, Trindon, Vernell, Michael Brooks

I will have to add the 2003 LSU football defensive unit. Yes, I know it wasn't an individual player, I'm naming them anyway as one of the top players to watch.

foshizzle, saw shaq play when I was 14, and met him once. He was dynamic in college but left early and , well the rest is history. Didn't remember him standing out beyond CJ, or much more than Stanley while at LSU.
Pistol Pete woulda been #1, but was before my time.
