Kyle Williams. Great college career, that he only improved on while in the NFL. Most people don't know that he's been one of the NFL's top 3 defensive tackles over his pro career. Was rated number 1 in a few years. Never below top 5. He's arguably had a Hall of Fame career to date and seems to be getting better and better. Which by itself is no easy feat when you're already one the NFL's best.

Outside of the fan base and especially outside of the SEC I would say JaMarcus Russell. People that didn't watch him at LSU just know him as the biggest bust ever, but he's the best QB I've seen at LSU in my lifetime.
