Not sure what their overhead is entirely but you need to also consider their profits from all other alcohol sales as well. It's a large number.

The gross profit on alcohol sales is typically 75%.???? Is that right ? If the COG is 25% then GP % is 75%

Without looking at the P&L, I would have to say your estimate is pretty good. Maybe a little on the low side, but we don't know how much of their sales was from just jello shots, and how much was beverage as opposed to food. Also unknown is how much the jello shot vendor made.

Is sales tax included in the $5 or do they charge tax as a separate line item?
