Good LDS boys (Mormons) are taught to plan on doing a mission for two-years between the ages of 18-22. The mission is paid for by the families of the kids going. The LDS Church gets free salesmen, 50K plus in most years. Women can now do 1.5 year missions though most LDS girls don't. The last stat I saw suggested that 74% of LDS guys actually start a mission, but many don't last long because they get homesick or break the myriad of absurd rules thy must follow.
The more traditional way is a guy goes to BYU for his freshman year then goes on a 2-year mission then is back at BYU for his sophomore season at age 21. Girls want to marry returned missionaries (religious reasons), so many get married immediately and have kids. BYU actually facilitates marriage and families for their students.

The LDS Church will excommunicate any man who tries to be a polygamist. Been that way since 1890. The polygamists are in separate Fundamentalist sects that the real LDS Church hate.

Yup, he's gigantic. Never played football before now, but played rugby in Tonga. Definitely a project. We hope that we get to see him in garbage time this year with field goal defense or something. Maybe in a year or two we'll see him make big progress, but he's very raw. He just learned what a sideline was a few weeks ago. You won't see him in our game.

Check the videos on his twitter. Dude is big, but SLOOOOOOOOOW and his technique isn't good. Pops straight up on the snap. A guy 100 lbs lighter with good footwork will beat him 8/10 times.

It's just a personal choice. Obviously the players who aren't Mormon don't go, but a good number of the Mormon kids don't either. Ziggy Ansah with the Lions and Kyle Van Noy with the Patriots didn't go.
And yes BYU has a ton of Poly's. They always have. I believe BYU was the school to first start dipping into the islands for athletes, under Lavell Edwards. Makes sense since almost 50% of Tonga is LDS. But not all of the Poly's are Mormon. We just got Keanu Saleapaga, a former USC commit. He's a huge DL who isn't Mormon.
But the big guy, Mo Langi, he's new to football. He doesn't look 400 lbs and he actually moves really well for a guy that size. But he's new to football and has to learn things. Coaches have said he's learning quickly. There's a chance he could be a solid contributor after a year of college S&C.

Can somebody explain the "mission" listed on some players and not some?
BYU is owned and operated by the Church of Jesus Christ of Latter-day Saints. The serving of a mission is not affiliated with the school nor is it required of young people. Each one makes that decision for herself/himself. Young men are eligible to serve for 24 months starting at age 18 and young women are eligible to serve for 18 months starting at age 19. Each young person is interviewed and counseled for several months before receiving the mission call (assignment).
I just finished my five years as bishop of a congregation where it was my responsibility to help young people prepare for the experience. They are to pay their own way with each missionary and her/his family contributing $400 per month into a mission fund that is then used to meet monthly expenses. The money is reallocated as needed. A missionary in Peru would only have expenses totaling $75 a month while a missionary in London would far exceed that per month. But the financial responsibility is equal no matter where they serve.
So no matter where they go to school, many will choose to take the 18-24 months off and serve the mission before returning to school. Because of BYU's affiliation to the LDS Church, they then choose to list the mission where the student athletes served.
My mission was in St. Petersburg, Russia so while the calendar said I took 6 1/2 years to graduate, I really did it in 9 semesters (due to a change in major).
Hopes that helps give a better understanding of the process. Thanks for asking.

Honestly, I watched that video and wasn't all that impressed. My main takeaway is that BYU better hope they aren't counting on much out of that RB. That shite ain't working on Guice.

He's currently 6th string. So no.

I finally got the video to work.
Guice is going to be pointing at big baw as he runs down the sidelines for 2-3 quarters. Because he clearly is RAW.
Then CEH will come get reps and big baw will probably be getting some at this point too.
CEH will see big baw, causing his little eyes to protrude from his head, possibly his helmet, and run through his legs without lowering anymore than downhill running level.
