Watched a showcase kid wow everyone last year with his 3 - 91mph throws across the diamond. Blew the others away... next closest was like 85 mph.
Of course ALL THREE of his throws landed in the stands. Literally.
Showcase.
But man that 91 mph number looks good on the showcase website.

What were Garza and Mathis' pop times?
Out of HS, Garza was 1.94 and is faster now. They're both under 2 seconds. Pitchers need to routinely use a good move, great move and have a quick delivery when runners are on first.

There are plenty of other catchers who may be just a tad worse defensively but hitting over .300

This. LSU's pitchers were downright awful at holding runners.

You say that, but we saw it on two different occasions this year. Mathis and Garza were both under .200 for a good bit of the season.
Hughes continued to play because there weren't other over .300 options to take his place.

Liuzza was great behind the plate and I think he batted around .220 +/- a little. In the current state of the catcher position you probably tolerate a weak bat, they gave up way too many free bases and PB's. In Hal Hughes' situation, I wouldn't have played him, the drop off in defense between him and Reid wasn't that drastic so you take more offense and a little weaker defense.

Liuzza hit under .300 one year and it was still in the .250s.
