Who are some recent recruits that de-committed from LSU, only to re-commit later (before enrolling elsewhere)?

Stingley and Jacoby Stevens are the only two I can think of.

We used to lose 1 or 2 recruits, now it's more like 4-5 over the long say 1 1/2 years of recruiting. It is the sign of the times.

Decommitments have escalated dramatically since 2016. Some eventually sign with the Tigers but most do not. The 2022 class has had eight decommits so far, half of whom are ranked in the national Top 10 at their respective positions.
Positional Top 10 players who have decommitted 2016-2021 are WR JoJo Earle, LB Raesjon Davis, DE Keanu Koht, CB Nate Wiggns, WR Rahim Jarrett, DT McKinnley Jackson, OT Kenyon Green, DE Jaren Handy, LB Adam Anderson, S Caden Sterns, LB Dyland Moses, WR Jharmon Ausbon, WB Felipe Frank and LB Erick Fowler.
Positional Top 10 decommits who eventually signed are DT Jaquelin Roy, CB Derek Stingley, S Kelvin Joseph (left after a year) S JaCoby Stevens, QB Lowell Narcisse (left after a year), LB Michael Divinity, and DT Ed Alexander.
