What % of the cost of a new build is finish work?

If you were building a new home, but you only needed the contractor to get you to finish work, like plumbing and electrical stubbed and the sheetrock floated, what % cost of the total build would that be?
Basically how much money would I save for doing all the finish work (paint, molding, flooring, cabinetry) myself?

From my experience, labor for each of those is about $10k-$15k each.
