I am having trouble with my LED light selection. I have them in a few rooms now but am hating the light in both. One to yellow one too blue and bright (even with dimmers, they still have a bad color hue)
By wife likes a harsher brighter light and me a softer one. Is there a good middle ground? TIA.

You need to know the color temperature. 2700k= "warm/yellow", 5000k= "blue" , there's a whole spectrum in between.
I typically prefer 4000k but we did go with 3000k in one bathroom and closet because it just worked better for those rooms.

Thanks, I really had no idea that those numbers were brightness. Granted, I have done no research either.

Those numbers are light colors, not brightness.
Brightness is measured in lumens.

I work for Home Depot, so I'm biased but do not buy Utilitec and do not buy a random brand off Amazon. If you buy at Lowes, buy Halo or Juno.
Halo is the best brand; is dims almost as well as an incandescent bulb. It will last as long as the home. It is pricey, though.
All Halo or Commercial Electric LED recessed trims at The Home Depot have a switch on the back that let's you select the color of light and they both dim well. You have 5 choices from warmer yellow (2700K) to cool white (5000K). You will probably like slightly different colors depending on the room and space you are trying to light so the switch comes in handy.
You can also buy the smart versions that change color and dim with an App like Halo Home or Phillips Hue.
If you are on a budget, the Commercial Electric models with the light color switch come in a 4pk for $35 and they are great.

You can choose from 5 different light colors with this item; you and the wife should be able to find a middle ground:

Those will work just fine as long as you are ok with 2700K (warmer color like a traditional soft white light bulb) light color across your entire house.
Those lights were most likely bought from Home Depot (Commercial Electric is Home Depot house brand like Kirklands is for Costco) on clearance when the new color switching model was brought in and being resold by a 3rd party seller. If the seller runs out on amazon you can buy the newer commercial electric version at home depot and the trim style/color will match. The only difference was the new model was upgraded to metal instead of plastic and it will have the switch on it which you can set to 2700K to match.

coon, I have every can in my house with those. I bought the kind you could select the bulb warmth, I think I set mine to a shade above soft white. I even switched my outside soffit lights to 4" led cans. the front four on my columns have an app and I can make them any color. pretty neat. text me for questions buddy

what is the advantage of using these over using an LED floodlight bulb that screws in just like the bulb you removed?

It looks like these can be had for $6-$10 reasonably. For a new build that’s cheaper or equal to buying bulbs and trims.
For non/new build, it would be equal to slightly more than buying new bulbs depending on what you can find.
I will add that these look better than bulb/trim as there’s no gap between the light part and the trim like there is in a regular fixture.

Just went through this song and dance at the home I bought recently. They are absurdly easy to put in and surprisingly inexpensive. Total game changer for helping to update a space. I went with Torchstars...They are dimmable, come in 4 colors, and 3 pack sizes. I have no complaints thus far.

I'm an electrical contractor and have tried about a dozen or so different brands of these things.
By far, the best looking and performing brand is the Feit brand found at Home Depot.
2700k is the best color.

put Em in at our house and super happy; the lighting is very warm, not that bright white you think of with LED, and they are dimmable

Well I’m in an existing house filled with incandescent bulbs.
I’ve been replacing with LED as they burn out but I just buy the FEIT bulbs from Costco. No issues and the light color and output is virtually identical to the incandescent.
They are super easy to change out with my extendable bulb changer. I wasn’t sure if there were any other advantages of the inserts. The slight gap around the bulb is not something that bothers me at all.

Personally I like a brighter more blue white in the bathroom so you can see if you missed a spot when you're shaving.
