There is actually a big problem with copper pipe pinhole leaks in my town. Plenty of plumbers say its caused by anything including chemicals added to the water supply, bad flux, water pressure too high...

I'm in Collierville and just had my third pinhole leak in 10 years (the last 2 were 8 days apart here 1/23 and 1/31). Going back and forth on replacing the copper. We're having to get floors and cabinets ripped out and replaced in kitchen, den, dining room, and entry hall so going ahead and remodeling the kitchen as well. If I'm going to replace the copper now seems to be the time.

If you did this in Collierville, who did you use? I've had one quote from Zack Street Plumbing

Would one need to insulate the PEX lines under a raised house?

the problem/concern with sharkbite fittings is not the immediate failure it's the long term inevitable failure of the internal rubber o-rings. i would never recommend installing those fittings in a wall or where the fitting is not easily accessible. also the fittings are 10 times more expensive. but they are easy and fast, true. but be careful of easy and fast.

you can run a manifold

This is why I love Pex. The manifold is like a circuit panel for each waterline, so if you need to replace a valve in the guest bath you can shut off the water to that line, and everything else still has pressure.

I've used Gene Taylor and Sons Plumbing for a few things, they've always done really good work.
